Triple Chunk Blondies with a dirty little secret! (125 delicious calories!)

I’ve always had a knack for bad boy blondies..

I made these blondies this past weekend as a treat to bring to a family cookout.  My lovely, amazing family from out West, whom I only get to see about once a year, was able to come out and spend a few days here up North.  They have been supporting me and my blogging journey and have been dying to try some of my healthy treats!  So to make my family happy and their bellies, I chose to make some delicious blondies.  I mean, come on, who doesn’t love a good, dense, chewy, butter-y blondie?  Whoever answered no I need to have a talking to.

These blondies aren’t only crazy because they are so scrumptious, but also because of the way they are made.  I’d consider these to be really healthy in terms of blondies, if not the healthiest version of a blondie.  They are made of chickpeas, yes chickpeas.  Now please bare with me, don’t click out of this page in fear that they may taste bad, or bean-y, not a chance or I wouldn’t have eaten them, trust me!  The key is pureeing the beans until they are completely, I repeat completely smooth!  That is crucial.  I’m not gonna say that these taste exactly like a blondie, but I’d say they are pretty darn close, probably like an 8.5 on a scale of 1-10 on how much they taste like a blondie.  But if I wasn’t comparing them to a blondie I’d give them a 10 all day, I love them!  I ate 3 big slices, and my family helped me with the rest of the plate.  I insisted on not telling them what was in them until they’d eaten them.  No one could guess what they were made of, and even the little kids loved them and couldn’t stop eating them!  So yes, these are kid approved!

These blondies are made with 3 types of morsels: semi sweet, butterscotch, and white chocolate.  They are sweetened with a mix of stevia, brown sugar, and regular sugar, and use applesauce and peanut butter as their fat source.  These blondies are chewy, decadent, and absolutely delicious, a healthy cookie bar.. and at only 125 calories per slice you can’t beat it.  They’ve got some protein and fiber too!  Go healthy blondies!

Healthy Triple Chunk Blondies

Recipe slightly adapted from Chocolate Covered Katie

Servings 14 

Calories per serving- 125

Fat– 4.2g

Fiber– 2.5g



1 can Garbanzo (or chickpeas) (1 can = 1.5 cups)

1 tbsp Natural peanut butter (creamy)

1 tbsp Better n’ Butter

2 tbsp Unsweetened applesauce

1/4 cup + 2 tbsp Light brown sugar

2 tbsp Granulated Sugar

1/4 cup Stevia (6 pckts)

1/4 cup Ground flax seed

1/2 tsp Butter extract (gives an extra butter-y flavor, but can be omitted if you don’t like to use artificial flavoring)

2 tsp Vanilla extract

3/4 tsp Baking powder

1/8 tsp Baking soda

1/4 tsp Salt

2 tbsp Semi sweet chocolate chips + 2 tbsp Semi sweet chocolate chips (set aside for drizzling later)

2 tbsp White chocolate chips

2 tbsp Butterscotch chips


1. Preheat oven to 350.

2.  Line a 9×13 pan with parchment paper.

3. Blend all ingredients (except chocolate chips, white chips, and butterscotch chips) in a food processer or mixer until all very, very, very smooth! You want to be able to see NO traces of bean left.

4.  Place bean puree into a bowl and stir in the chips.

5.  Spread blondie mixture into the pan and bake for about 30 minutes.

6.  Remove from the oven.  Allow to cool for 30 minutes, you can put them in the fridge for about 10 minutes, which helps them firm up a bit.

7.  Melt chocolate.  Drizzle melted chocolate over blondies while they are still in the pan.  Place in the fridge to set chocolate.

8.  Once the chocolate is set, take blondies out of pan by pulling them out by the parchment paper.  Spray a knife with non-stick spray, and slice into 14 squares.

9.  Eat up!

Hopefully you have a can of garbanzos just by chance sitting around up in your kitchen cabinet.  And if you do I have some really good advice for you… head on into the kitchen and make these gems.

Oh, and one more word of advice: whip up a batch of these blondies for a cute surfer blondie (boy or girl), and you’ll have them in the palm of your hand! (;  Ahah.
